Wild Huckleberry Dark Chocolate Sea Salt

A dear friend of mine recently returned from a visit to Colorado. She brought me a gift of chocolate from the Creede Trading Company in Creede, Colorado. She thought the bar, Wild Huckleberry Dark Chocolate with Sea Salt, would be something I’d enjoy. Indeed! I’ve trained her well.

Born and raised in the state of Wisconsin, I’m not familiar with huckleberries. So, what exactly is a huckleberry? According to my searches on the internet, huckleberries look similar to blueberries and are related to blueberries but don’t taste like blueberries. That clears things up, right?

Before I dive into the huckleberry bar, I allow my Chocolate University Online training to take over and write down my tasting experience using the CUO Chocolate Evaluator. This tool helps me step through the process of tasting in an organized way; appearance, aroma, texture, flavor, etc. Each time I do this, I learn more about what I like in a chocolate, and that helps me appreciate it more.

Here’s my take on the Wild Huckleberry Dark Chocolate with Sea Salt...

The aroma coming from this bar is strongly berry. It has a shiny, medium brown color with a soft snap. The texture is smooth and the melt is slow.

Along with the strong berry aroma comes a very strong fruity and berry flavor. I feel like I should say it tastes like a huckleberry, but I don’t know what a huckleberry really tastes like. The closest I can come to being more descriptive than just “berry” would be blackberry.

I find it interesting that there is no huckleberry filling or huckleberry bits in the bar. Both the aroma and the flavor come from the added huckleberry flavoring. Although the berry flavor is intense, it doesn't hide everything. I can detect floral notes, and somewhere in the middle are the sweet cocoa flavors coming through. At the end, there's a salty finish from the sea salt. Delicious!

It’s been a few days since my friend gave me this bar. I’ve savored it and stretched it out as long as I can, but I just ate the last square (I even managed to give up a square for my husband. Only ONE, mind you).

    Just returned from Montana where this bar is found in several gift stores. Huckleberries are Montana’s claim to fame – kind of the manufacturer to share the bar with Creede. To me a berry is a berry and adding it to chocolate makes both berry and chocolate better. The salt is an added perk. I perhaps will order these bars come winter – not going to risk a melted mess in summer heat.

    Very interesting and intriguing. Just what does a huckleberry taste like? Most any fruit is added deliciousness if it is in chocolate.
