What’s Your Favorite Chocolate Bar?

To help you get some practice responding to blog articles, I have posted this simple question: What is Your Favorite Chocolate Bar?

My favorite chocolate bar comes from Lindt. I prefer dark chocolate over milk chocolate so the Lindt Excellence 70% Cocoa Bar is my bar of choice. Sometimes I like even more intense chocolate flavor so the Lindt Excellence 85% Cocoa Bar wins out. Both are really smooth chocolates with great flavor. The 85% is not as sweet (therefore more bitter) than the 70%, but sometimes it's just the flavor I'm looking for.
Generally, if I'm going out to buy some chocolate one of these two bars wins out.

Dove Dark Chocolate!
Right now, my favorite chocolate is the Lindt 90% cacao bar. There is a very smooth feel to it and I love the malty finish. I don’t have a specific milk chocolate that stands out, but for a white chocolate, I like Green & Black’s
I thought Chocolate Bars and Candy Bars were from two different planets. Candy Bars were mostly made of sugar candy ingredients and very few cocoa butter and liquor contents in the whole bar. Correct my understanding here. The reason i brought this up , i saw some made comparison of Twix, Toblerone, Mars, Snickers etc.
Even though I am in the chocolate business, I still have a fondness for Twix candy bars.
Since I have been in the chocolate businees learning and tasting in my experience I like either Scharffen Berger’s 78% San Juan de Cheni bar or Choconats goji Berries 10 gram tastes. They are not candy. They are real chocolate.

I’ve been sampling a lot of dark chocolate bars lately, and a few have really stuck out as favorites:
1) Green & Blacks 70% – nice citrus finish (cacao from Dominican Republic)
2) Nirvana 72% – hints of cherry flavor on finish (cacao from Dominican Republic)
3) Divine 70% – well blended flavor (cacao from Ghana)
4) Republica del Cacao – 3 varieties from different regions of Ecuador each with a unique flavor profile
I love most bars with sea salt in them. For instance Pacari Raw with sea salt and cacao nibs.
It´s hard to pick just one bar. One of my favorites is Divine 70%. And the reason I would pick this is not only the taste, but also because it´s fairtrade and is not very expensive.
Trader Joes dark chocolate peanut butter cups
Amedei Chuao, 70%. I rated it 10 out of 10. This bar sets the standard that I measure other bars by.
Here are my notes on the taste:
“Sublime! Complex and multifaceted with 3 or 4 movements. Sweet and Roast. The initial subtle brown sugar/ molasses fades to roast. Middle- a few tangy notes, like mild citrus. Notes of figs, molasses, caramel, and mild nuts.”
If you want a chocolate that will transport you to a whole new realm, one that you may not even know exists, then try this one.
I am embarrassed to say that right now my favorite chocolate bar is Trader Joe’s “The Dark Chocolate Lover’s Chocolate Bar” with 85% Cacao. In fact I’m a bit discouraged in doing bean to bar experimentation because this bar from Trader’s just hits the spot for me! It advertises “smooth and fruity from the Tumaco Region of Columbia.” And it doesn’t disappoint. The bitter 85% is the first and last notes but in between is this fruit taste that just balances the experience. Heaven! In fact, I’m going to go indulge right now…
My favorite Chocolate by now is a chocolate from Grenade, Grenade Organic Chocolate, I like its rough texture and bitter flavor, since it is hand made and also organic, I also like the small cacao chips inside, I think it is better than most of some fancy european Chocolates I’ve tried. but still I like Lindt, Tobleronne, Ghirardelli and some other traditional brands.
It depends on what it’s paired with. A dark chocolate between 70 and 80% with a good merlot dessert wine sounds fine to me.
My favorite chocolate can only be found in Belize. It’s Cotton Tree Chocolate. They have a nice factory in the south that you can tour that was voted one of the top 10 things to do in Belize. The chocolate with coffee is really great.
I have been enjoying the CHOCOLOVE line of bars. They have one with Cherries and Dark Chocolate as well as a number of other really fine bars.
Some of the Dagoba are nice as well as the Perugina, although the two are not anything alike.
I wouldn’t call my choices “candy bars”.
Casual – Coppeneur Ocumare 72% Cacao pur
Dark aristocracy – Michel Cluizel 99% Noir Infini
For special occassions – Amedei Porcelana, Pralus Chuao
I find that I can be a Snob when it comes to chocolate! If I open the bar and the first sent I get is raisin (though I hate raisins, crazy I know)then it will get eaten (with gusto) by me. If I get a burnt milk smell (sorry Hershey’s) then I might eat it if there is nothing else. But please don’t ask me to eat that cheap foil wrapped bunny shaped stuff….all I can taste is the wax, yuck!!!!

My favorite is no longer the Kit Kat from my childhood now that I’ve completed CUO. After tasting so many delicious gourmet bars it’s difficult to pick a favorite. Right now, although I’m usually a fan of dark chocolate, I guess I’ll vote for Organic Masala Chai by The Tea Room. (Only 38% cacao.)
There is a German company that makes customized chocolates. On their German website chocri.de it is possible to choose a base and then add all kinds of ingredients to make a very personal chocolate bar.
I just discovered milk chocolate with strawberries, roasted almonds and candied rose petals for me. mmmmh.
I heard that they are expanding to the US in January: http://www.createmychocolate.com and people can still vote on the website to decide which ingredients will actually be used on the American website. I think it is a really cool idea.
Perhaps my chocolate palate is not as educated as my coffee palate, but nothing hits the spot for me like a good Hershey’s with almonds (Of course) or my hallmark brand … Ghirardelli — nuts or not — love that San Francisco chocolate!
