Vosges Super Dark Matcha Green Tea

The last time I reviewed a Vosges chocolate bar was June of 2009! (Assuming we don't count their sister brand, Wild Orphelia.)
I can’t believe it’s been that long. In that old post, I reviewed Mo’s Bacon Bar, and it was truly shocking at the time. Bacon in chocolate? Inconceivable! That was then. I’d say it’s pretty common place nowadays.
I know I’ve eaten several Vosges bars since then, but apparently I haven’t taken the time to blog about them. Well, that changes today. There are so many good things to crow about when it comes to Vosges Haut-Chocolat.
Super Dark Matcha Green Tea
Today’s chocolate bar is a 72% dark chocolate with matcha green tea, spirulina, and cocoa nibs. I say that like it’s not so strange. Spirulina is a blue-green algae! I mean, who would put algae together with green tea and then think, let’s mix them together in chocolate? (By the way, Spirulina is considered a superfood. The health benefits from Spirulina are promising).
Katrina Markoff thinks of these crazy combinations, and pulls them off too. She’s the founder and chocolatier of Vosges Haut-Chocolat. According to their website, www.vosgeschocolate.com, “Katrina’s fusion of indigenous spices, flowers, roots, herbs and liqueurs with premium chocolate creates a sensory experience that nurtures awareness of and appreciation for the world’s diverse cultures”. Well said.
The aroma of this bar is basic, intense chocolate. The bar itself is a beautiful dark brown color with a healthy shine. The snap is crisp.
The flavor profile begins with a bold, rich chocolate that’s quickly followed by green tea, and something that reminds me of a slice of toasted oatmeal bread. There are hints of hay and soft grass.
At the finish there are pleasant nutty and earthy flavors. I found this chocolate to be low on fruity notes but my husband swears he tastes strong red currant jelly. Neither of us is wrong, our pallets and taste buds and prior chocolate eating experience tells us different things. That’s the beauty of eating exotic and complex flavors in dark chocolate.
Chocolate is a perfect medium to deliver layers upon layers of flavors, terroir, and nuanced notes. Somehow, Vosges can create masterpieces out of, well… just pieces. Chocolate making is an art as well as a science.
I encourage you to pick up any of the many Vosges varieties and try them. Don’t let your brain dwell too long on the list of (sometimes crazy) ingredients. Just dive in. You won’t be disappointed.
