Chocolaterie Ickx makes Belgian seasonal chocolate box novelties sold to high end department stores and chocolate shops. The company was founded in the 1970s, primarily making pralines. Eventually, the growth of the company led to the building of a new chocolate factory in Essen, Belgium.
My family received a box of Belgian Chocolate Pumpkins as a gift for Halloween. The autumn collection has four varieties: Salted Carmel (Milk Chocolate), Chocolate Crème (Dark Chocolate), Pecan Praline (White Chocolate), and Pumpkin Ganache (Spiced Confectionery Coating).

Wasabi and chocolate? I have to admit, my first thought was, “weird!” Putting wasabi and chocolate together is not something I would have thought to try.
I like wasabi, especially in microscopic amounts on my California Roll. I’m not that familiar with wasabi in terms of nuance flavors or tasting notes though, so how do I know if it pairs nicely with chocolate? Then again, how do I know it won’t?

Salty Chocolate

Salon du Chocolat, the largest trade fair devoted to chocolate, takes place every November. A unique fashion show is part of the event in which models walk down the runway wearing little but chocolate. Last year, there were chocolate basques and skirts, gowns imbedded with truffles, and even handbags made out of 70% cocoa solids.
The rest of us eat chocolate instead of wearing it, but there will always be a strong connection between chocolate and fashion. Chocolate never goes out of style. However, the forms in which we want to consume it incessantly change.
The latest trend for chocolate is to taste salty. Odd, eh? During the late 90's, chocolate combined with chilli was all the rage. Today, the combination of chocolate and salt seems to be in. It is said to have started around 2003, the time Gerard Coleman of Artisan du Chocolat devised sea-salt caramels which are tiny orbs of salty toffee covered in dark chocolate and dusted in cocoa.

Chocolate Covered “Sea Turtle”

Last Monday I reviewed a Yuma Arizona chocolates shop called Chocolate Crafters. I reported on their chocolate covered candied orange peel. Oh - yummy memory.
Of course, I didn’t try just one item. The Sea Turtle, a dark chocolate-covered salty caramel and pecan cluster, captured my attention, too. It was all I expected and more. The pecans were crunchy, the salty caramel was smooth, buttery and, yes, salty, and the chocolate, although mild, blended perfectly into all the flavors with ease.
