Pascha Organic Dark Chocolate 70% Cacao

I know I’ve reviewed Pascha chocolate before, but it’s soooo worth repeating. Pascha is one of my favorite bean-to-bar chocolate artisans for a variety of reasons.
One reason, and the it’s the reason I first bought Pascha, was the fact that my daughter can eat their chocolate bars because they are made in a peanut and nut free facility. In fact, they’re free of a lot of things, like the top 8 allergens including soy, dairy, egg, wheat and gluten.

Once upon a time, when I was working at a large chocolate manufacturer, I created chocolate chip formulas. Formulas are based on adding ingredients together until they total 100%. A semi-sweet chocolate chip has to contain a minimum of 35% chocolate liquor or cacao mass (by law) so a typical chocolate chip formula might look like this:

Goldenberries (also known as Cape Gooseberries) are grown in warm climates like Peru, South Africa, and Hawaii.
They are most often sold in stores in the U.S. as dried fruit and are not easy to find fresh.

“70% Cacao Passionately Pure Pascha Organic Dark Chocolate. Free from Peanuts, Nuts, Dairy, Soy, Eggs, Wheat and Gluten”. I almost pinched myself after reading that on the label. Is this real?
My daughter has a number of food allergies (nuts, peanuts, and eggs) and I’m sad to say, she has never been able to taste all the delicious chocolates I review for Chocolate University Online. Until now!
