Vande Walle’s Candies – Part Two
July 19, 2018
A “Chocolaterie” is usually a business that makes chocolates and sells them at the same place. It’s also usually a small family-owned business and typically only at one location.
The term “Chocolaterie” is of French origin and isn’t used very often in the United States. Instead, we use terms like Chocolate Shop, Candy Store, or Chocolate Company. You may see the occasional “Chocolatier” or “Chocolat” used to imply that the business makes the chocolate it sells.
Casa del Chocolate – Varadero, Cuba

Every chocolate I’ve ever tasted comes with a story. This is no exception.
I found chocolate in Cuba! And what an extraordinary experience for me. Born in the mid-sixties in the U.S., everything Cuba has been off limits for my entire life.
Last month I traveled to Cuba with my husband and other alumni from our alma mater, Carroll University. We had a packed itinerary focusing on cultural and educational activities. Our People to People experience was equal parts eye opening and heart opening.

I recently took a business trip to Walt Disney World in Florida. Yes, that’s correct, it was business – chocolate eating business! My S.M.A.R.T goal: I will eat at least one chocolate item per day in as many Disney parks or Orlando attractions as I can fit into my four day trip, take notes and write a blog post for each item before Christmas!
So hang on, this will be a fun ride you’ll enjoy as much as I do. Over the next couple weeks, I’ll review what I found and tasted while at Disney World and at Orlando’s World of Chocolate Museum and Café.

Vacationing in Jackson Hole, Wyoming was amazing! The Tetons, the hiking, the biking, the chocolate! The chocolate?
Every vacation destination I make a point to hunt out a local chocolates shop and this was no different. We stayed with family living in Jackson, and they knew where to take me - CocoLove Dessert Boutique. It was full of beautiful creations by pastry chef Oscar Ortega.
Chocolaterie ICKX – Belgian Chocolate Pumpkins
November 7, 2016
Chocolaterie Ickx makes Belgian seasonal chocolate box novelties sold to high end department stores and chocolate shops. The company was founded in the 1970s, primarily making pralines. Eventually, the growth of the company led to the building of a new chocolate factory in Essen, Belgium.
My family received a box of Belgian Chocolate Pumpkins as a gift for Halloween. The autumn collection has four varieties: Salted Carmel (Milk Chocolate), Chocolate Crème (Dark Chocolate), Pecan Praline (White Chocolate), and Pumpkin Ganache (Spiced Confectionery Coating).
Shots, Shots, Shots, Truffle Shots, Everybody!
February 1, 2013
When Sherri Athay was in a chocolate-making class, she remembered intricately making chocolate truffles only to discard the shell and eat the centers.
"I thought there must be a better way to get to the best part of the truffle, without all that work," she said. It was a light bulb moment after seeing a set of tall shot glasses while shopping with her daughter. Truffle shots!
After some years, they made the idea tangible. They came up with unique confections from a storefront in Essex, Connecticut, and worldwide from their website. Truffle Shots display what Sherri Athay considered as "good stuff" in a truffle, layered in a two-ounce shot glass.
