Raaka First Nibs
April 30, 2020
Last week I started talking about the chocolates I’ve been eating during my time of “safer at home.” I hope you were able to find or make stuffed dates covered in chocolate. Or, if not, had something equally fruity and delicious (chocolate covered strawberries or apricots comes to mind!).
So, what am I eating today? Right now I’m enjoying the last of my First Nibs selection from Raaka.
Simple Truth Organic Dark Chocolate Bars
July 1, 2019
Organic chocolate continues to improve and trend. Over the last couple years I’ve seen improvements in chocolate flavor development, unique and/or exotic flavor offerings, price (much more affordable!), availability, and brands. Simple Truth chocolate bars are part of the Kroger Co. store brand line of organic chocolate.
The two Simple Truth bars I’m sharing with you today are: Cocount Dark Chocolate and Marcona Almond Dark Chocolate
Special K Chocolate Coconut Cashew Bar
January 30, 2017
Today I decided to try the Special K Nourish® Chewy Nut Bar. I grabbed the new Chocolate Coconut Cashew flavor.
First and foremost, this bar is sweet and chewy. When you pull it apart, there are long, gooey strings of what I’m guessing is mostly corn syrup. It reminds me of thin, soft caramel strands but not the color of caramel. This is more whitish or even translucent.
The peanuts, cashews, and coconut really stand out with their strong nutty and coconut notes. The dark chocolate coating, on the bottom of the bar, along with the chocolate chips wrap your taste buds in chocolatey flavor, too.

Coconuts are the fruit of the coconut palm, scientifically known as cocos nucifera, and the word nucifera means "nut-bearing." The fruit-bearing palms are native to Malaysia, Polynesia, and southern Asia, and are now also abundant in South America, India, the Pacific Islands, Hawaii and Florida.

Coconut Fudge Balls
December 8, 2010
Early Spanish explorers named the tropical island coconut after the animal it resembled. Coco means "monkey face."
Did you know that the coconut provides a nutritious (and delicious!) source of fiber, vitamins, and minerals? It is one of those "functional foods" I’ve talked about in previous blogs.
Coconut oil has a bad reputation of being a “bad” fat, but in reality it is not. Coconut oil is saturated, but it does not contain trans fats.
