Pascha 85% Chocolate Chips

Once upon a time, when I was working at a large chocolate manufacturer, I created chocolate chip formulas. Formulas are based on adding ingredients together until they total 100%. A semi-sweet chocolate chip has to contain a minimum of 35% chocolate liquor or cacao mass (by law) so a typical chocolate chip formula might look like this:

My son graduated from college a couple weeks ago. Earlier, during the party planning stage, he informed me that he’s not really into cake for dessert (what!?). Sweets, he said, are more my style.
So, when it came to figuring out what to serve, I was looking for easy, delicious, fun, and well, not the typical decorated sheet cake.
While different ideas kept floating around the edges of my thoughts (but not really impressing me), my mom suggested a chocolate fountain. Hmm. That had appeal. What could be easier than self-service dessert? And what could be more fun and delicious than a cascading wall of chocolate with endless dipping treats?
Guittard Extra Dark Chocolate Baking Chips

Standard chocolate baking chips, most often labelled “Real Semi-Sweet Chocolate Chips”, contain a minimum of 35% chocolate. A typical chocolate chip ingredient list looks something like this: Semi-Sweet Chocolate (Sugar, Chocolate, Cocoa Butter, Milkfat, Soy Lecithin, Natural Flavors).
The Guittard Extra Dark Chocolate Baking Chips are made with 63% chocolate. The ingredient list looks like this: Cocoa Beans, Sugar, Sunflower Lecithin and Real Vanilla. There a couple noticeable differences between the two lists, and I want to take a moment to talk about these.

The National Chocolate Chip Day was celebrated last week. It’s not like we need a specific reason to have our chocolate treats, but it feels to good to have something specific to celebrate here and there.
Chocolate chips have always been am essential ingredient in an array of delectable treats, from chocolate chip muffins to chocolate chip cookies. They became famous in the 1930s, when Ruth Graves Wakefield accidentally created the original chocolate chip cookie at her Toll House Inn in Whitman, Mass.
To celebrate National Chocolate Chip Day, albeit late, go get a handful of chocolate chips and bake something sumptuous for you to share with friends and family. Here is a recipe to get you started.

Cookies can be many things to many people. They can be a daily treat or an occasional guilty pleasure. They can be a midnight snack staple just before you hit the sheets. They can be your go-to food during unannounced visits from friends. They can be practically anything you want them to be. It gets all the better when you throw nutritious stuff into the picture.

Chocolate Chip Lollipops

Everyone knows about lollipops. These kiddie treats are especially popular with the, er, kids. This lip-smacking type of confectionery, also called lolly, pop, sucker, or sticky-pop comes in different shapes, sizes, and flavors. They are known for being mounted on top of a stick.
The origins of lollipop are somewhat a blur. Many people claim that it has been around since the 18th century. The Roman word "lolly" apparently means tongue and "pop" means slap.
These sweet delights have always had a special place in our hearts since most of us grew up loving them. These days, various companies are producing delectable and entertaining lollipops but most of these treats come in fruit flavors. Just for fun, let's make some delicious alteration and come up with chocolate-chip lollipops!
