Sulpice Sweet & Spicy Dark Chocolate

My tongue is on fire! But, what else would I expect with cayenne and cinnamon on the label of this "sweet & spicy" hand-painted artisan chocolate bar from Sulpice Chocolat?
As soon as I get the first taste of this exotic-looking chocolate bar, there’s a pleasant chocolate flavor with earthy, and nutty overtones.
Then the cinnamon floats in--lightly at first--but just when the heat of the cayenne hits the back of the throat, the cinnamon takes over!
The finish is overwhelmingly what I would describe as a cinnamon red-hots candy flavor.
Personally, I would prefer a burst of bold chocolatey notes at the end, but that’s just my preference. Nothing wrong with this chocolate bar, the intense cinnamon candy flavor just doesn't quite fit my personal tastes.

But it's not easy... Colored cocoa butter can be tricky to work with because there you must understand the three states of cocoa butter -- too cold to work with, too hot to work with, and the narrow window of “just right” to work with!
