PASCHA Organic Dark Chocolate (Allergen Free!)

“70% Cacao Passionately Pure Pascha Organic Dark Chocolate. Free from Peanuts, Nuts, Dairy, Soy, Eggs, Wheat and Gluten”. I almost pinched myself after reading that on the label. Is this real? 

My daughter has a number of food allergies (nuts, peanuts, and eggs) and I’m sad to say, she has never been able to taste all the delicious chocolates I review for Chocolate University Online. Until now!

According to their website, www.paschachocolate.com, PASCHA has a “mission to make the purest, safest chocolate without any allergenic ingredients“.

Allergens In Foods

In general, the food industry - including the chocolate industry - pays little attention to the subject of food allergies. The main focus remains finding ways to improve taste, ways to make things sound more nutritious, and ways to cut cost.

It’s true, in the U.S., there are government mandated allergy statements and disclosures on labels, but it’s rare to find food items explicitly claiming to be “free from <insert allergen here>”.

Food allergies can be life threatening if triggered, and the exposure only needs to be a trace amount of the allergy-inducing ingredient. Anaphylactic shock is the worst form of the body’s allergic response.

Read any chocolate bar and you’ll see some of these ingredients, and possibly warnings that it was made or manufactured in a facility using other allergic ingredients.

Okay, enough background info. Let’s get down business.

Reviewing PASCHA Organic Dark Chocolate 70% Cacao

The aroma is chocolately with mild tobacco notes. The color is a nice dark brown with a slight reddish hue.

The flavor is fantastic; mainly nutty with vanilla, honey, and maybe a very soft pineapple. I think there is also a hint of cinnamon but its short lived.

The most noticeable thing is how uniform the flavor is throughout the tasting experience. In other words, there’s no beginning note and then a different middle flavor and finally an aftertaste of something else. It’s just lovely all the time it’s melting in your mouth!

Wonderful.

By the way, my daughter LOVES it. I do too. Like mother, like daughter. It feels great to say that about a chocolate!
