Larabar Chocolate Chip Cookie Dough

According to the LÄRABAR® website, their fruit & nut Bars are Gluten Free, Dairy Free, and Non-GMO. They have manufacturing processes in place to protect against cross-contact with gluten containing products.
The ingredients are unsweetened fruits, nuts, and spices that are minimally processed to be as close as possible to their natural state.
I don’t have any dietary reason to eat Larabar, but I have been curious to try one for a long time. So, I picked up a box in my local grocery store.
I know it’s risky to buy an entire box before you’ve even tried one, but according to the list of ingredients for the Chocolate Chip Cookie Dough bar, it sounded like a delicious combination.
There are only four ingredients; cashews, dates, chocolate chips, and sea salt. I’m pretty sure that if I came across a bowl of cashews, dates, and chocolate chips, I wouldn’t hesitate to grab a handful. Minimal risk.
I don’t know about you, but when I eat cashews, dates, and chocolate chips, I don’t think to myself, “this tastes just like chocolate chip cookie dough!” It is a stretch of the imagination. As it turns out, I have a good imagination, and if I think about it while I’m eating it, I can almost believe it to be true. But cookie dough?
So, What Did I Think?
Imagination aside, this is a really, really tasty bar! I thoroughly enjoyed every bite.
The chocolate chips managed to stay chocolaty even while mixing with the strong flavor profiles of sweet dates and nutty cashews. The chocolate chips are soft but firm.
The melt and mouthfeel of the chips and nuts and dates makes the texture chewy but not cloying. The cashews are in small enough pieces that they don’t dominate the texture or the flavor. It is truly a masterful blend of ingredients.
Boy, am I glad I bought a whole box!
