Kilwins Republica del Peru 80% Dark Chocolate

During the holiday season, I was leisurely strolling along State Street in Madison, Wisconsin, with friends, when they abruptly steered me into a sweets shop.
While sugared candies quickly got their attention, I focused on finding the chocolate. I ran into the homemade fudge first, but I am OK with that kind of distraction!
While binging on samples of fudge, I managed to discover a display of Kilwins single-origin chocolate bars and purchased a Republica del Peru 80% dark.
It had been a while since I had Peruvian chocolate and was looking forward to this sample!
Kilwins has been in business since 1947. They offer quality confections, ice cream, and chocolates.
According to their website, www.kilwins.com, their “bean to bar Single Origin Chocolates come from very specific regions of the world, like the Dominican Republic, Peru and our new line from Mexico, which produces beans with bold unique flavors.”
This 80% Peru cacao is earthy, and slightly sour, with subtle fruity notes in the beginning. It has a woody, leather finish.
There is a wonderful aroma of unknown spice, perhaps cinnamon, a deep dark brown sheen, and a hard snap. The texture is a bit coarse, but not gritty.
I enjoyed the flavor profile captured in the Kilwins creation. Now, I must try the Dominican Republic and Mexican origins as well.
