Guittard Soleil D’Or Milk Chocolate

The Guittard Soleil D’Or milk chocolate bar is made from Trinitario beans grown in South America.

There are four types, or varietals, of cacao: Criollo, Forastero, Trinitario and Nacional. Criollo and Nacional are flavorful beans but with fairly low yields. Forastero accounts for approximately 80% of the world’s production of cacao, mostly grown in Africa, Central and South America.

Trinitario is a cross between Forastero and Criollo, combining the flavorful aroma of Criollo with the heartier and higher yield of Forastero.

Some of the naturally occurring flavors from the Criollo bean can include spicy, grassy, buttery, leathery, tobacco, sour cherry, and other red fruity notes.

This particular Guittard milk chocolate bar contains 38% South American Trinitario cacao and offers a wonderful taste experience.

The dairy notes come off right away at the beginning with creamy, milky, and honey flavors flooding the mouth. Soon after, the chocolate flavors emerge.

The chocolate is strong enough to shine here, and the dairy notes do not overpower the chocolate.

I can taste nuttiness with a hint of spice and tobacco coming from the chocolate. Toward the end, the dairy notes come back and linger well after finishing.

The texture is smooth and melts evenly throughout the tasting.

The Soleil D’Or is easy to enjoy! A very good milk chocolate from beginning to end.
