I love it when Gail Ambrosius, owner and masterful chocolate creator of Gail Ambrosius Chocolatier, writes “In my opinion, good chocolate is its own food group”.
It’s like she knows me!
Gail Ambrosius Chocolatier is located in Madison, Wisconsin. She deserves to be world famous, but for selfish reasons I’m glad she’s a well kept secret. I’m torn. Should I sing her truffles’ praises so others may know her greatness, or do I withhold the fact that I’ve experienced the most amazing chocolate creations so she’s never tempted to mass produce them?
I must have been born to share because I can’t help myself. My package of twelve assorted chocolates consisted of grey salted caramels and hand dipped truffles, all covered in a dark chocolate that is simply extraordinary.
My absolute favorite of the bunch is the Earl Grey truffle – Earl Gray tea infused chocolate ganache in the center, encased in a thick shell of dark chocolate with lavender sprinkled on top! Need I say more?
But of course I need to say more! A close second is Lucille’s Vanilla. Or maybe the hand-rolled Cinnamon/Cayenne. No wait, it’s the Espresso with the little chocolate coffee bean perched on top.
Well, I tried to narrow down my recommendations for you, but I just can’t. You’ll have try them for yourselves. And try them all just to be sure!
Acccording to her website, gailambrosius.com, Gail learned her skills in France under the tutelage of Valrhona and Cluizel chocolatiers. I know and love both Valrhona and Cluizel chocolate. No wonder Gail’s chocolates are so incredible.
