Easy No Bake S’mores Cookies Recipe

Do you need a quick chocolate treat that doesn’t involve any fancy machine and preparation? Because let’s be honest, holidays can be tough and time consuming. And sometimes, all the main dishes could take up all your time then you remember you forgot about the dessert. Well, do not worry! This recipe is perfect for you because you only need 10 minutes to make it, plus no baking needed.

I should also probably mention that this is not your typical s’mores recipe. Instead of placing the marshmallows, chocolate, and graham crackers on top of one another, you will have to melt and mix them altogether in this recipe. You can also be creative and decorate with different toppings depending on your mood! This will make it a unique treat that your guests will surely be fond of.

To make this yummy not-your-typical s’mores, you would need marshmallows, chocolate chips, and cereals. You can any plain cereals that you want in this recipe like Rice Krispies or Cornflakes. For toppings, drizzle with chocolate syrup or use crushed graham crackers for extra flavors. You can also opt to mix in some nuts, M&Ms, or even dried berries.

Easy No Bake S'mores Cookies

What you need:

  • ¼ cup butter
  • 1 bag mini marshmallows (approx. 11oz)
  • 1 bag milk chocolate chips (approx. 11oz)
  • 8 cups Golden Grahams cereal (11.7 oz box)

What to do:

Set aside 1 cup of mini marshmallows and 1 cup of milk chocolate chips. Place the rest of the marshmallows and butter in a medium bowl and heat in the microwave in 30 seconds interval for about 3 times until fully melted and smooth.

Stir the remaining milk chocolate chips into the melted marshmallow. Then, add the cereals and the rest of the remaining marshmallows and chocolate chips that were set aside. Stir properly to make sure everything is coated with chocolate.

Use an ice cream scooper or use a tablespoon to scoop mixture onto a wax paper lined baking sheet. If you are going to use your hand to form the mixture, spray a little bit of coconut oil or melted butter in your hands so they’re not too sticky.

Well, that’s it! Add your chosen toppings and let cool for at least 20 minutes.

If you are making an extra batch, you can also put the mixture in a pan, press, and cut into squares. Add your favorite toppings, and you now have s’mores bars which you can put in pretty boxes and give away as gifts this holiday season.

For extra oomph, you can add colorful sprinkles or make another batch using other colorful candies.

For storage tips, place them in an airtight container and refrigerate or put it in the freezer for up to 2 weeks. But I'm sure it will all be gone before that! 😊
