Dark Chocolate Ice Pops with Espresso

Chocolate and coffee are two of my most favorite food in the world. Put them together and you get a match made in heaven! When done right, coffee can boost the chocolate taste making it richer and smoother than silk. You can tell from this that I’m already daydreaming about it!

If you’re a coffee lover like me, you will love making dark chocolate ice pops with espresso. It’s the perfect sweet treat that you can whip out at any time, plus it’s really easy to prepare. You will be needing ice pop molds and sticks for this recipe so better stock up on those before you start. Ready? Here’s the recipe.

Dark Chocolate Ice Pops With Espresso Recipe

What you need:

  • 1 cup unsweetened cocoa powder
  • 2 tbsp. instant espresso powder
  • 3½ cups whole milk
  • 1 cup sugar
  • 1 tsp. vanilla extract
  • 2 tbsp. cornstarch
  • ¼ tsp. kosher salt

What to do:

In a medium saucepan, combine all ingredients except for vanilla extract. Whisk until a smooth paste form, then add the vanilla extract.

Place the saucepan over medium heat and let the mixture simmer. Continue stirring to prevent skin from forming along the sides. Use a heatproof rubber spatula to continue stirring until mixture is thick.

Let cool for 5 minutes but continue whisking from time to time. Then pour into ice pop molds. Freeze for an hour until it starts to set, then insert the sticks. Freeze again for about 5 hours.

And that’s it! Unmold to serve. For storage tips, cover the molds tightly and keep in the freezer for up to 3 months. But I'm sure it will all be gone before that! 😊
