Cookies and Cream Brownies Recipe

Here's a delicious brownie recipe with the Cookies and Cream theme. It actually uses chocolate sandwich cookies within the body of the brownie as well as sprinkled on top. They look good and taste great!
We made these for friends this past weekend. I'll warn you though that these are very sweet, so they might be more appreciated by the kids than the adults. Of course they can pair nicely with a good cup of black coffee.
Cookies and Cream Brownies
Combine butter, both sugars, and cocoa powder in a large mixing bowl until thoroughly blended. Add one egg at a time beating each one into the mixture. Combine flour and baking powder in a small bowl. Then add to the batter. Stir in the vanilla and the 12 crushed cookies. Pour mixture into a greased baking pan. Bake at 350° for 25 minutes. A toothpick inserted in the center should come out with moist bits. Cool the pan on a rack. After cooling, if desired, top with vanilla frosting. Sprinkle remaining crushed cookies over the top. Cut into bars and serve. |
