Chocolate Marshmallow Cookies Recipe

Chocolate Marshmallow Cookies Recipe

What you need:

For the Cookie Dough:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Filling:

  •  16 marshmallows, halved (you'll need 32 halves)
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream

What to do:

Preheat your oven to 350°F (180°C). Line two baking sheets with parchment paper or silicone baking mats.

In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy. This usually takes about 2-3 minutes.

Then beat in the egg and vanilla extract until well combined. In a separate bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a soft dough forms.

After that, take a tablespoon of dough and flatten it into a small disc. Place a marshmallow half in the center, then wrap the dough around it, forming a ball. You have to make sure that the marshmallow is completely covered by the dough. Repeat this process for the remaining marshmallow halves and dough.

Place the cookie balls on the prepared baking sheets, leaving enough space between them. Bake for 10-12 minutes or until the cookies are set and slightly cracked on top.

Then allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

For the chocolate coating: In a microwave-safe bowl, combine the chocolate chips, 2 tablespoons of butter, and heavy cream.

Microwave in 30-second intervals, stirring after each, until the mixture is smooth and glossy. Alternatively, you can melt the ingredients in a heatproof bowl over a pot of simmering water (double boiler).

Dip each cookie into the melted chocolate mixture, ensuring it's evenly coated. You can use a fork or a spoon to help with this process. Allow any excess chocolate to drip back into the bowl.

Place the chocolate-covered cookies on parchment paper to set. You can speed up this process by placing them in the refrigerator for about 15-20 minutes.

And that’s it! Once the chocolate coating has set, your chocolate-covered marshmallow cookies are ready to enjoy!

Share them with friends and family or indulge in their sweet, gooey, and chocolatey goodness all by yourself.

For extra oomph, top with whipped cream, chocolate shavings, or fresh berries before serving.
