Almond flavoring is one of my favorites, hence why I'm in love with this chocolate amaretto cheesecake recipe for summer entertaining.
The smell of almonds or amaretto just brings me into such an ethereal Earth-loving experience. Can you relate?
This chocolate amaretto cheesecake is perfect for sweet sultry summer evenings.
Have you heard of the legend of Disaronno?
Disaronno is one of the most popular amaretto liqueur makers, with long-standing roots in Italy. Their story begins in the year 1525, during the Renaissance, with artist Bernardino Luini.
Luini was taught by the famous Italian artist Leonardo da Vinci. He was commissioned to paint a fresco of the Madonna of the Miracles in Saronno, Italy, but upon arriving decided he needed a young woman to portray the Madonna as his muse.
For this, he chose a nearby beautiful innkeeper. To show her gratitude, the young woman prepared a special gift of a flask full of an amber liqueur, and that's how the legend of Disaronno began - from a simple gesture of kindness.

Chocolate Amaretto Cheesecake
Sprinkle chocolate wafers over the bottom of a 7-inch spring-form pan, then set aside. Position knife blade in food processor bowl; add cream cheese add all other ingredients except for egg and chocolate chips. Blend until smooth. Add egg and blend just until mixed in. Fold in chocolate chips and bake at 300Ā° for 65 to 70 minutes. Let cool in pan, on a wire rack. Cover and chill for at least 8 hours. Remove sides of pan and transfer cake to serving platter. Garnish with chocolate curls. |
