Cheese & Chocolate Tunnel Cake

I've always been intrigued with the idea of chocolate and cheese pairing. And actually, I'm a huge fan of it. A lot of people out there claim that it's much harder to get right than, say, pairing cheese with fruit, and a lot of time it turns out to be plain nasty. However, when you do get it right, it can be sensational. It happens to be a scrumptious way to end a long day, or just when you feel like having two of the greatest foods humans ever created.
Chocolate and cheese are two uber rich foods, and it follows that a little can go a long way. Try this recipe and savor all the goodness in this pairing.
Cheese & Chocolate Tunnel Cake • 1 two-layer chocolate cake mix with pudding • 1/3 cup margarine or butter • 16 ounces cream cheese, softened • 1/2 cup sugar • 2 eggs • 2 teaspoons margarine or butter, melted • 2 ounces semi sweet chocolate • 2 teaspoons corn syrup Preheat oven to 350°. Prepare cake mix according to package directions, substituting margarine for oil. Reserve 1 cup of batter. Pour remaining batter into a 12-cup greased and floured fluted tube pan. Combine cream cheese and sugar, mixing well at medium speed with an electric mixer until well blended. Blend in eggs, one at a time. Pour over batter in the pan. Spoon reserved batter over cream cheese mixture. Bake 1 hour or until toothpick inserted in center comes out clean. Cool 30 minutes; remove to a wire rack. Combine margarine, chocolate and corn syrup in a small saucepan. Cook over low heat until chocolate is melted. Pour over cooled cake. |
