Just recently, Kilham took a trip to Mast Brothers Chocolate in Brooklyn, N.Y. to witness the behind-the-scenes in chocolate making.
Time and again, research has revealed that chocolate is in point of fact beneficial for you, health-wise. The benefits involve protecting the heart and mind, even sex drive.
In 2007, brothers Mike and Rick Mast started manufacturing organic chocolate made from some of the best cocoa beans worldwide, and they make approximately 5,000 bars every week .

Eat Chocolate, Help Beat Breast Cancer

In respect to Breast Cancer Awareness Month, the Ghirardelli Chocolate Company is supporting the National Breast Cancer Foundation (NBCF) through the program “Be an Intense Supporter”.
The Ghirardelli Chocolate Company is a producer and seller of premium chocolate products. It was founded by an Italian chocolatier Domingo Ghirardelli and derived its name from him. The company was is the second-oldest chocolate company in the United States, incorporated in 1852 and still going on.
National Breast Cancer Foundation or NBCF, on the other hand, is dedicated to spreading awareness and encouraging optimism in the battle against breast cancer. The foundation brings motivation to fight this dreaded big C by backing free mammograms for financially-challenged women as its main mission is to save lives through early detection. They also support research programs across the country. They are standing their ground in increasing awareness through education, providing diagnostic breast care services for those who could otherwise not afford them and giving nurturing support services.

Chocolate ‘As Good As Exercise’

New studies have revealed that a moderate amount of high quality dark chocolate can be as good as a session in the gym. Cocoa was found to contain a certain compound called epicatechin and this allegedly enhances muscle the same way exercising does.
Researchers at Wayne State University in Detroit, Michigan, conducted an experiment on three groups of 12-month-old mice, the equivalent of middle aged humans: one was given epicatechin twice a day for 15 days, the second one was given epicatechin as well and spent 30 minutes on a treadmill, while the third exercised without receiving the extract.
There was an observed increase in the number of energy-producing mitochondria, the ‘powerhouses’ of cells, in the mice that only took epicatechin and they had significantly better muscle performance and took longer to tire than those that only exercised. It was unusual as these mitochondria are normally a byproduct of getting aerobic exercise such as running or cycling.

A Chocolate a Day Keeps the Doctor Away

It’s not like we ever need any encouragement to eat chocolate, but just in case, here’s one: a new study suggests that people who eat it regularly may not only be satisfying their sweet tooth craving, but also cutting down the risk of developing certain diseases such as cardiovascular disease, diabetes, and stroke by 37%, 31% and 29%, respectively.
"We found a potential link between chocolate consumption and prevention of heart disease,” said Dr. Oscar H. Franco, lead researcher from the department of public health and primary care at the University of Cambridge in the UK. The studies involved more than 114,000 participants and consumption of both dark and milk chocolate and incorporated chocolate bars, chocolate drinks and chocolate snacks. “At this point, we are in the early stages of research," he added.

Chocolate as Part of a Weight-Loss Diet?

Contrary to popular belief, studies have shown that one can adhere to a certain diet even while enjoying a daily chocolate fix.
In an experiment funded by Hershey’s, overweight and obese women who were on a strict reduced-calorie diet but still had a bit of chocolate for snacks (of course, provided by Hershey’s) on the side were still able to lose about 11 pounds within four months on average. These women had BMIs ranging from 25 to 43 and they consumed 1500 to 1800 calories per day.
Body Mass Index, also known as BMI, is the measure of weight in relation to height. A person can be called overweight when his/her BMI is between 25 and 29.9; obese is a BMI above 30. A normal BMI is between 18.5 and 24.9.

The company was established in 1911 by Joseph William Thornton who eventually turned the business over to his sons, Norman and Stanley Thornton. Since then, it has always been Britain’s go-to store when it comes to high-quality chocolates. This year, it celebrates its Centenary birthday. Gone are the days when chocolate practically screams “unhealthy”. Today, consumption of chocolate in appropriate amounts can actually be beneficial for you, health-wise. And it goes without saying that you should have the right kind of chocolates in hand, not the ones loaded with sugar and other not-so-healthy stuff.
Contrary to popular belief, eating chocolates can possibly improve cholesterol levels, lower blood pressure and the risk of having diabetes. As strange as it may sound, it is true according to Harvard researchers. This study involved a review of 24 studies and 1,106 participants. And the said health benefits are due to the chocolate’s content called flavonoids which are of highest levels in the dark variants. Like I said, the right kind of chocolates, always keep that in mind.

Or do you even wonder about its milk protein contents as this melt-in-your-mouth goodness touches your palate? I bet no. The only thing you can think of is whether to get another bar or not, but there are people who take interest in this kind of scientific stuff.
Galit Segev, a chef and a biochemist in the pharmaceutical industry, enjoys her chocolates but is also enthralled by its physical properties. Having a background in such field, she is normally interested in why certain foods react variedly to certain cooking techniques.
She just recently had a part in the Ultimo Science Week talking about the science of chocolate such as how these treats are manufactured. From soil to your mouth, she gave a talk about what makes for a quality chocolate.
