Banana Chocolate Chip Muffins • 2 medium ripe bananas • 2 eggs • 1 cup brown sugar • 1/2 cup butter, melted • 1 teaspoon vanilla • 2 1/4 cups flour • 2 teaspoons baking powder • 1/2 teaspoon ground cinnamon • 1/2 cup mini-chocolate chips Puree bananas, eggs, sugar, butter and vanilla until well blended. Add flour, baking powder and cinnamon, mix until just blended. Fold in chips. Spoon into well-greased muffin tins. Bake at 350° for 10 minutes. |
